Chia Seed Pudding

My kids love this chia seed pudding. I love the health benefits of chia seeds – omega 3 fatty acids, protein and fiber. Topped with fresh mango and drizzled with honey, this chia seed pudding is sure to be a hit in your house too. You can get chia seeds in Whole Foods. I buy the chia shots that are individual single servings.


  • 1 Cup Water
  • 1 Cup of Sweet Brown Rice (I bought this in bulk at Whole Foods)
  • 1 Can of Light Coconut Milk
  • ¼ tsp. Salt
  • 1 Tbsp. Sugar
  • 1 tsp. Vanilla
  • 1 tsp. Tapioca Flour
  • 1 Shot of Chia Seeds
  • 1 Mango
  • 1 tsp. Honey

Rinse brown rice a few times in water. Combine 1 cup of water and rinsed rice in a glass bowl. Place the bowl, covered with a plate, in the microwave. Microwave the rice on high for 3 minutes at a time for 5 times – stirring in between each time. Continue until rice is tender.  In a saucepan on medium heat, heat the coconut milk. Add the vanilla, sugar, salt and tapioca flour. Add the rice and stir for 10 minutes. Add the chia seeds and let sit covered for 15 minutes. Serve warm and top with mango and honey.
