We went apple picking this past weekend, and while the kids were having fun filling their baskets with apples, I kept thinking – what am I going to do with all of these apples!  Well, here’s my version of the healthiest apple turnovers around. They’re so healthy, I actually think I’ll serve these for breakfast.

Ingredients for the crust:

  • 1 ¼ Cup Oat Flour
  • 1 ¼ Cup Whole Wheat Pastry Flour
  • 2 Tbsp. Flaxseed Meal
  • 1 tsp. Sugar
  • ¼ tsp. Salt
  • 12 Tbsp. Earth Balance Butter
  • ½ Cup Ice Water

To make the crust, add all of the dry ingredients and pulse to combine. Add the 12 Tbsp. of Earth Balance and pulse. Add water slowly, still pulsing, until dough comes together. Divide dough into 2 flat oval disks and chill in the refrigerator for 30 minutes – so it’s easier to roll later.

Ingredients for the filling:

  • 4 Apples
  • 1 Tbsp. All-Purpose Flour
  • 1 tsp. Vanilla Extract
  • 1 tsp. Cinnamon
  • Pinch of Nutmeg
  • ¼ Cup Agave Nectar

Chop the apples and add to a medium bowl. Add all ingredients and mix.

Preheat oven to 400 degrees Fahrenheit. Prepare 2 baking sheets with parchment paper. Take the dough out of the refrigerator and roll each disk until dough is very thin (but can still be picked up) – flour the dough and rolling pin constantly so that it doesn’t stick when rolling.  Cut into 5” squares. Fill each square with 1-2 Tbsp. of the filling. Wet the edges of the dough and cross one side over to the other to form a triangle. Crimp the edges to seal the dough. Bake for 10 minutes or until they are slightly brown. Makes 8-10 turnovers.
