Sunday morning is always brunch day in our house. We stay in our pajamas for a long time. I like to make this French toast recipe and put Maroon 5 on Pandora, “Sunday morning rain is falling….”


  • 2 Tbsp. Earth Balance Butter
  • 3 Eggs
  • 2 Tbsp. Vanilla Almond Milk
  • 1 tsp. Vanilla Extract
  • 1 tsp. Cinnamon
  • ½ Loaf of Good Bread (I like to use multigrain bread to get whole grain into my kids’ diet)
  • 1 Pint of Assorted Organic Berries (blackberries, raspberries, strawberries)
  • Powdered sugar for dusting (optional)

Heat the Earth Balance butter in a pan over medium heat. Once it stops bubbling, you know it’s ready. In the meantime, mix the eggs, almond milk, vanilla extract and cinnamon in a flat bowl. Coat each slice of bread with the egg mixture and place into the pan. After about 1-2 minutes, check the bottom of the bread to see if it is golden brown, then flip.  Arrange of a platter with seasonal berries and dust with powdered sugar. Serves 6.
