Gong Hei Fat Choy! This morning, my daughter and I cleaned and decorated the house for the Lunar New Year. We decided to make some healthy almond cookies without butter. They came out puffy and tasted wonderful. Happy New Year!

Ingredients:

  • 1 ½ Cups of Flour
  • 5 oz Nonfat Organic Greek Vanilla Yogurt
  • ¼ tsp. Baking Soda
  • ¼ Cup Sugar
  • ¼ Cup Honey
  • 1 Egg
  • 1 Tbsp. Wheat Germ
  • 1 tsp. Almond Extract
  • 1/3 C Blanched Almonds
  • 24 Raw Almonds (for the top)

Directions:

Set the oven to 350 degrees Fahrenheit. Combine all ingredients (except raw almonds) in a mixer and drop a teaspoon-sized amount onto a baking sheet. Top each cookie with a raw almond. Bake for 10 minutes. Makes 24 cookies.
